Make Your Own....

 Almond Butter! It's easy to make your own and it's soooo delicious! It's also super good for you! Here are the ingredients that you need along with a food processor. I scoop out a whole jar of coconut oil into the food processor, pour in a little vanilla (maybe a teaspoon, I don't really measure it), maybe a teaspoon of salt or sea salt if you like ( or no salt, it's up to you), and slowly add the almonds as you process until desired consistency. I stop adding almonds when it gets about as thick as peanut butter. Process it until it's as creamy as you want or leave it a little chunky. It's yummy either way! I love to eat a spoon of this with an apple or a banana, mixed in Greek yogurt, spread on a piece of whole grain bread, and also in my oatmeal. You'll have to be careful not to over do it though, because this stuff is so yummy that it's easy to eat too much. Just a spoon or two a day is great!

We use coconut oil when cooking eggs, to saute veggies or skillet meals, as lip balm, and sometimes as hand lotion. If you haven't tried coconut oil yet then I definitely recommend that you go pick up a jar or two! You'll love it!



You know how breakfast is the most important meal of the day? Well I am not a big breakfast eater, but I have been doing good with eating a good breakfast everyday. We have 1/2 cup portions of steel cut oatmeal prepared ahead of time in small bowls in the fridge, so in the morning I just heat it up and add a few things to it. It's like a "Super Oatmeal" full of good stuff! I add a little bit of cinnamon, a spoon of ground flax seed, a bit of honey for sweetness, a spoon of homemade almond butter, and a little coconut milk ( the guys at Supplement Superstore told me to try coconut milk instead of regular milk and I love it! ). Mix it all up and enjoy!



So everyday for breakfast I have a small bowl of Super Oatmeal, one egg with two egg whites, a banana, and a cup of coffee :-) Can't forget the coffee!

  1. Thank you for the email it was so very helpful! I am looking forward to changing the way I have eaten in the past. I purchased many good and healthy items today as I was grocery shopping. Question for you...is your coconut in a carton or a can? I could only find it in a small can, in with the ethnic food. Also, is there one brand of coconut oil you like more than another? I bought some at Walmart today (I was actually surprised they carried it!)
